Chocolate Chip S’mores Cupcakes
  1. Cupcake Directions
  2. Preheat the oven to 350 degrees.
  3. Line cupcake pan with the black cupcake liners
  4. In a medium bowl, add the cake mix, butter, milk, stir until combined
  5. Fill cupcake liners 3/4 of the way full.
  6. Bake in the oven for about 21 minutes.
  7. Pull out the cupcakes and allow them to cool before frosting.
  8. Chocolate Ganache directions
  9. Using a small pot, bring the heavy whipping cream to a slow boil
  10. Place the chocolate chips into a heat proof bowl
  11. Pour the hot heavy cream over the chocolate chips
  12. Let sit for 1 minute before whisking until smooth
  13. Decorating directions
  14. Frost the cooled cupcakes by take a large ice cream scoop and scoop a
  15. mound of chocolate ganache onto the cupcake
  16. Marshmallow Frosting Directions
  17. Using a double broiler, mix all ingredients except the vanilla in a
  18. large heat safe bowl
  19. Pour the mixed ingredients into the bowl of a standing mixer
  20. Place the bowl over the prepared double broiler
  21. Start to simmer the water and heat the mixture until the candy
  22. thermometer reaches 165 ℉ and all the sugar has dissolved, about 5-10
  23. minutes from when the water starts to simmer.
  24. While heating, gently mix to ensure even cooking
  25. Once all the sugar has dissolved and the mix is 165 ℉, remove from
  26. heat and place the bowl in a standing mixture and mix on medium high
  27. for 5-7 minutes until the egg whites stiffen up and the mixture starts
  28. to cool.
  29. Once it starts to stiffen up , add the vanilla.
  30. Directions
  31. Scoop the marshmallow frosting into the disposable piping bag
  32. Pipe a mound of the marshmallow frosting on top of the ganache
  33. Using a kitchen torch, toast the marshmallow frosting
  34. Place your favorite type of s’more cookie on top of the marshmallow frosting
