St. Patrick’s Day Unicorn Cupcakes

  1. Directions:
  2. Preheat oven as per directions on the box,
  3. Put the liners in the muffin pan. Set aside.
  4. Following the directions add ingredients.
  5. Mix all ingredients as instructed.
  6. Divide the batter into two bowls
  7. Mix in a few drops of green food coloring into one bowl
  8. Alternate between the green batter and the plain one, scoop about 1
  9. TBSP of batter each into the cupcake liners until ⅔ full
  10. Put in the oven and bake for 22 minutes.
  11. Check for doneness. ( Insert a toothpick into the center of a cupcake,
  12. it should come out clean.)
  13. If they are not done, check again every three minutes until they are done.
  14. Remove from oven and allow to cool.
  15. Transfer to a cooling rack and
  16. allow to cool completely before frosting.
  17. Decorations
  18. Wilton Unicorn icing decorations (Found at Walmart stores)
  19. Frosting Directions :
  20. Using a standing mixer combine the butter, powdered sugar, heavy
  21. whipping cream, vanilla, and mix on medium speed until combined and
  22. smooth
  23. Set aside 1/4 C of frosting in the small bowl and mix in 2 – 3 drops
  24. of green food coloring and mix until combined
  25. Scoop the green frosting into 1 side of the piping bag
  26. Scoop the remaining frosting into the piping bag
  27. Squeeze the piping bag to make sure that both colors will pipe out of the tip
  28. Decorating Directions :
  29. Using the frosting bag, pipe frosting onto the top of the cupcake
  30. Using the Unicorn Horn icing decoration, place it into the top middle
  31. of the frosting
  32. Place 1 “Ear” on both sides of the horn
  33. Place the “Wink” eye icing sprinkle under the horn where eyes should go
  34. Place the St Patrick’s day sprinkles anywhere around the ears and horn
  35. of the cupcakes.
