Rainbow Popsicles

These Rainbow Popsicels are so fun for anytime of year, not only are they super colorful but they are super healthy as well.

Makes 10 popsicles

For the purple layer:

¼ cup frozen blueberries

¼ cup frozen raspberries

¼ cup frozen sliced banana

¼ cup vanilla greek yogurt

2 to 3 tablespoons water

For the blue layer:

½ cup frozen blueberries

¼ cup frozen sliced banana

¼ cup vanilla greek yogurt

2 to 3 tablespoons water

For the green layer:

¼ cup frozen spinach

¼ cup frozen pineapple

¼ cup frozen sliced banana

¼ cup vanilla greek yogurt

2 to 3 tablespoons water

For the red layer:

¼ cup frozen strawberries

¼ cup frozen raspberries

¼ cup frozen sliced banana

¼ cup vanilla greek yogurt

2 to 3 tablespoons water

For the orange layer:

½ cup frozen mango

¼ cup frozen peaches

¼ cup vanilla greek yogurt

2 to 3 tablespoons water

For the yellow layer:

¼ cup frozen pineapple

¼ cup frozen peaches

¼ cup frozen sliced banana

¼ cup vanilla greek yogurt

2 to 3 tablespoons water

  1. In a blender or food processor, puree each individual layer and spoon into the popsicle mold.
  2. Cover and push popsicle sticks into mold.
  3. Freeze overnight or until completely frozen.
  4. To remove, dip the popsicle mold into warm water for 3 to 5 seconds before pushing the popsicles up from the bottom of the silicone mold.
