Pineapple Upside Down Jello Shots

Ingredients:

4 envelopes of knox gelatin, divided

2 ¾ cups pineapple juice, divided

¼ cup grenadine

1 cup whipped cream vodka

Maraschino cherries for topping

2 oz. plastic cups

 

Directions:

Place your plastic cups onto a baking sheet or into a muffin tin. In a medium saucepan, whisk together ¾ cup pineapple juice and 1 envelope of knox gelatin. Stir in grenadine. Heat over medium-low heat until just steamy. Pour evenly between the plastic cups in a thin layer. Move to the refrigerator to chill for 1 hour. Then, in a medium saucepan, whisk together 2 cups pineapple juice, 1 cup whipped cream vodka, and 3 envelopes of Knox gelatin. Heat over medium-low heat until just steamy. Divide evenly to fill the cups the remainder of the way. Chill in the refrigerator for 2 more hours, until set. Before serving, cut a small hole out of the center of each jello cup and pop a maraschino cherry into it. Enjoy!
