Mickey Jammie Dodger Cookies
  1. Preheat the oven to 350 and line two cookie sheets with parchment paper
  2. Using a standing mixer, or a large bowl with hand mixer, beat the butter, sugar, and almond extract until creamy and fluffy
  3. Gradually mix in the dry ingredients until combined and dough like
  4. Remove cookie dough and place onto a lightly flour dusted cutting board
  5. Place dough onto cutting board and dust with more flour
  6. Roll the dough to about 1/4in thick
  7. Cut out 12 mickey heads and place them onto the cookie sheet
  8. Using the mini heart, cut out 6 hearts in the center of the mickey head
  9. Bake in the oven for about 8-10 minutes or until a light golden brown
  10. Remove from oven and allow to cool completely before moving off tray
  11. Place the cookies with the heart in the middle onto a wire rack
  12. Dust with powdered sugar
  13. Spread about 1 tbsp of raspberry preserves onto the whole mickey head cookie
  14. Carefully place the freshly dusted mickey head onto the top of the raspberry jam
  15. Enjoy!
