Valentines Day Minnie Mouse Cupcakes

These super sweet and adorable Minnie Mouse cupcakes will sure impress your Valentine this year! They are so stinking cute and fun to make.

Valentines Day Minnie Mouse Ear Cupcakes
  1. Fondant Ears Directions
  2. Lightly brush your bow mold with powder sugar
  3. Pinch off 1 tablespoon of red fondant and push into a bow mold of your choice
  4. Create 22 red bows
  5. Set aside on a plate to allow to air dry
  6. Lightly sprinkle powder sugar onto a cutting board and roll into a ¼ inch thickness
  7. Cut out 44 round circles for the ears and set aside
  8. Allow to dry for a few hours
  9. Lay out 4 sheets of paper towels or scrap paper to avoid painting your counters.
  10. Place two ears at a time onto the paper
  11. Place the heart stencil onto the two circles
  12. Lightly spray the circles with the pink spray
  13. Carefully lift the stencil off the circles and move aside to dry
  14. Repeat steps with remaining white circles
  15. Cupcake Directions:
  16. Preheat oven to 350 degrees and line cupcake pam with liners
  17. In a large bowl, whisk together the flour, cocoa powder, baking soda and salt together
  18. Using a standing mixer, beat together the butter, shortening, and sugar until light and fluffy
  19. Mix in the egg, vanilla, red velvet extract and red gel food coloring until combined
  20. Alternating between the dry ingredients and milk, gradually mix in the both ingredients into the mixture until combined
  21. Scoop batter into the cupcake pans, filling 3/4 of the way
  22. Bake in the oven for 21 minutes
  23. Allow to cool completely
  24. Frosting directions
  25. Using a standing mixer, beat together the butter, cream cheese, powdered sugar, vanilla extract and heavy whipping cream until smooth and stiff peaks form
  26. Split the frosting into two bowls
  27. Add a few drops of red food coloring into one bowl and mix until combined
  28. Frosting and decorating Directions
  29. Place the piping bag into a large cup and fold the sides over the edge
  30. Scoop some red frosting in the piping bag in 4 lines
  31. Scoop white frosting into the piping
  32. Pipe the cooled cupcakes with the frosting
  33. Place a red bow into the center of the frosting
  34. Place two ears on the side of the bow
